Portions for 1 person:
3 onions
1/2 cup water
1/2 cup white wine
4 cardamom seeds
1 tbsp olive oil
1/4 tsp iodized salt
1oz Swiss cheese
1 slice country bread
Heat the olive oil in a pan. Slice the onions and cook them in the pan on medium heat for 30 to 45mn. The onions must slightly brown as they will give its colour to the soup. Then add the water, the salt and the cardamom and let simmer for another 15mn.
Toast the bread, put it in a soup plate, cover with the soup and grate the cheese on top. Serve immediately or grill in the over if the plate withstands the heat.
Very good soup!!!
It can also be prepared in advance and heated up before serving. Take care that enough fluid remains in the soup.
