6oz cold skate
1 apple
1 endive
1 carrot
1oz Swiss cheese
1oz mayonnaise
On the day before, cook a skate wing larger than needed with vinegar and bay leaves. Once cooled off, cut the leftovers in 1"x1" pieces. Peel the apple and cut it in small pieces. Cut the carrot in very thin slices with an apple peeler. Cut the endive and the cheese in small pieces. Put all the ingredients in a salad bowl and add the mayonnaise. Mix and serve rapidly.
Good salad. Cold skate is very good.
This salad was also tried without cheese and with another dressing: heavy cream, lemon juice, salt and garlic. It is good but hides the taste of the skate.
